Sourcing & roasting

We chase sweetness, not smoke.

Most coffee is roasted dark enough to hide where it came from. We do the opposite. Every lot is bought from a producer we can name, paid 2–3× the commodity rate, and roasted just far enough to unlock its sugars — never far enough to taste like the machine.

Batches are small (12 kg), logged obsessively, and cupped twice before a single bag ships. If a roast doesn't sing, it becomes cold brew for the neighbors. That's the whole quality-control department.
